Sorry I haven't got back to you sooner, but I've been in California most of the week - I took an iPad with me, but for some reason you can't post on this forum with an iPad. Anyway, sounds like a good plan. The main thing is gonna be finding the stripes - if you can find them, and see those big orange arcs on your depth finder, you can probably catch them. During Thanksgiving week, I'd look around the Pleasure Point area pretty closely. During mid-October through November, I typically have pretty good luck there in 30-50 ft of water on humps that drop off to the side to 70+ feet. Bucktail jigs should work well, but you might also try Hopkins spoons - drop them down below where you're marking fish and pump up in fairly violent jerks. You might also try the free-style jigs offered by bass pro and others. I've also caught them on castmaster spoons that I keep tied to spinning reels in case a school stars busting on top. I've dropped those spoons down, and have had good success getting stripers to bite. Just remember, finding them is the whole ball game - if you can find them you can catch them.
