I'm in Jackson, MS this morning to judge the Mississippi State BBQ Championship Cookoff. I visited the site last evening and there's some really good teams here for the championship. The bbq should be outstanding. The teams will be smoking/cooking whole hog, shoulders and ribs. I'll get to judge at least three teams in either whole hog, shoulders or ribs (maybe more if they are short of judges). More later after the contest and I get back to Lake Martin.
