I have frequently observed crepe myrtles pruned to nothing but four or five naked "stobs", cut off below any branches, and they come back like gangbusters, sprouting multiple branches from each "stob". Prune to your heart's desire...they will come back and you will have to do it again.
And yes, this climate and soil are VERY conducive to prolific, verdant growth.
