Cinco de Mayo (Spanish for "5th of May") is primarily a regional and not an obligatory federal holiday in Mexico. The holiday commemorates an initial victory of Mexican forces led by General Ignacio Zaragoza Seguín over French forces in the Battle of Puebla on May 5, 1862. The date is observed in the United States and other locations around the world as a celebration of Mexican heritage and pride.
why do we (the united states) observe this day? when did mexico become a state?

In the early 1800s, England was the founder and sole producer of mayonnaise. Years later the product was introduced to Mexico and caught on with a vengeance. The Mexican population had not enjoyed a new taste sensation for generations and just craved the new product mayonnaise.

It was a very difficult product to obtain since it had to be shipped by boat all the way from England. Mexico completely ran out of mayonnaise and was anxiously awaiting the next shipment.

An expedited shipment (a full boat load) was dispatched.

The Mexican people awaited its arrival with great culinary expectation.

Unfortunately the boat hit severe weather and sunk. Word of the tragedy reached Mexico, and word of the sinking spread like wild fire throughout Mexico. You could hear it shouted though the streets -

"cinco de mayo".
