BOY, SINCE SUZY PUT HER FULL EFFORTS TOWARD THE RESTAURANT
THE FOOD AND SERVICE HAS REALLY COME UP. HOWEVER, ONE OTHER ITEM NEEDS ATTENTION. $6 FOR A GLASS OF YELLOW TAIL WINE THAT SELLS AT THE STORE FOR $8.99 A BOTTLE IS A LITTLE STEEP.

AND CATFISH DINNERS AT MOST RESTAURANTS RUN ANYWHERE UP TO $10.99 FOR THE BEST--AND I AM TALKING UPSCALE NICE RESTAURANTS;
BUT, SUZY CHARGES $14.95. WE HAVE OFFERED TO BRING FRIENDS TO THE RESTAURANT FOR CATFISH, BUT WHEN THEY FIND OUT THE PRICE, WE JUST GO TO OSKAR'S OR NIFFER'S OR THE COVE.

I KNOW THAT THE SEASON AT THE LAKE IS SHORT; BUT, WITH GOOD MEALS PRICED REASONABLY FOLKS WOULD COME ALL YEAR ROUND
AS THEY USED TO DO--AND STILL DO AT SINCLAIR'S.

Wine is a tricky thing in a restaurant. I am assuming this is a red wine. The life on that bottle is four or five days. The standard on a glass of wine is to get a reasonable price ($6.00) not bad for a glass.It is likely they may sell one more glass. The rest may go to waste thus producing less than a 200% mark up.(not enough to cover the overhead) Catfish is over $4.00 per pound just as everything else has gone up. I own a restaurant and as long as the freshness and quality are there, this may be what retail price succumbs to. Unfortunatly these prices are real not only to you but also to us. I hope this helps. Yellow Tail is about as low as you can get in wine ... $8.99 retail is about $5 to a restaurant.

Charge what you want for the wine or food ... if the quality is there people will be there. You measure value not only by price, but price, quality, service, experience, etc. You can't charge a premium dollar and provide and inferior product. Pour a decent glass of wine. Red wine does not even last 4-5 days ... but who cares. In a restaurant you should not need that. You get 4 glasses out of a bottle if you are giving a standard 6 ounce pour and 5 glasses with a 5 ounce pour. Depending on the quality of a restaurant they should cost bottles at 2 to 3 times cost. Low end bottles normally at 3 times and high end going down to 2 times.

As for the catfish, that price seems high, but if you can leave saying this was the best catfish i ever had and the service was great ... then it may be worth it because people will say it may be expensive but it is the best you will get anywhere. I don't know if that is the case. If it is not and it is just as good as somewhere else, then it is not worth the higher price.

I forgot to say, red wine at best will last 2 day if it is un gassed. But if you gas after each pour with nitrogen, then you maybe can get 3, possibly 4 days if you also keep it at true cellar temps of 58 degrees. I doubt that is happening, but as it say, if you are not pouring off 4 glasses in 2 days in a restaurat there is a problem.

She closed this weekend and is reoperning in the Red Hill Chevron... There will be no restaurant at Anchor Bay unless someone else opens one. Also, I have heard for the last two years that they were going to bulldoze the current building and marina and rebuild the entire kit and kaboodle...
