Traditionally on the fall color cruise on Center Hill, we have a fish fry for our houseboat community. This year we have decided to smoke a whole hog. We are expecting 60-70 people. It has been lots of years since I had any part of a whole hog cooking. I would welcome any suggestions, pig size, temps, cooking times, warnings, etc.. We will be cooking on a portable rotisserie over charcoal and hickory. We need to be ready to eat about 6 on Saturday night. Thanks!!
